Can I buy your sourdough starter?
I do sell my dehydrated sourdough starter; you can find it on my products page. It comes with directions on the package. Per Hawai'i's cottage food laws, I am unable to sell active starter. But don't worry! The dehydrated starter will be ready for use in about 3 days.
What flour do you use?
I use bleached bread flour and bleached all purpose flour. I haven't found an organic bread flour that I like, and it's pretty difficult to find an unbleached bread flour in the quantity that I use. There are plenty of bakeries that do use organic unbleached flour around here though! I prefer the quality of the flour that I use, and it also helps to keep my costs lower than others!
Do you make anything gluten-free?
I do not. Advertising an item as gluten-free would require me to use a completely different bakery, one that has never had gluten in it. Different utensils, a different oven, different bowls, a whole different ventilation system. Flour sticks to everything, and I cannot comfortably label any of my items as gluten-free due to the high risk of cross-contamination.
How old is your starter?
I purchased my starter in January of 2024, and it was labeled as a 120 year old starter. Do with that as you please.
Why should I choose sourdough?
My sourdough proofs on the counter for about 4 hours and then it is refrigerated overnight in what is called a "cold retard." This helps to further bread down the complex carbohydrates and allows your body to digest it easier. Sourdough also has a lower glycemic index, making it a perfect choice for people with diabetes!
Where can I find your products?
You can order directly from my website, or you can find me at the Lokahi Farmers Market in Kailua on Sundays! Contact me ahead of time to make sure I'll be setting up though.
What days are you available for pick-up?
I do pick-ups at the Enchanted Lakes Safeway and the Aikahi Safeway on Sundays and Wednesdays. I also deliver anywhere on MCBH on Sundays and Wednesdays as well. Head over to my ordering page to pick a timeslot.
How long have you been baking sourdough?
I started baking as soon as I got my starter in January of 2024. I have been selling to the public since March of 2024.
